They would have been married 40 years today. Wait, can that be right?

I never was the type of girl that dreamed of dressing up like a princess at her wedding, but I did always dream of wearing a mini dress with sparkly silver shoes just like my mom.

Happy Anniversary Mom. And Dad, I’m guessing you’re eating shrimp tempura in some alternate universe to celebrate.

    I had sizzling :Banh Xeo” instead to use up the left over lettuce, beansprouts and shrimps. It’s Nancy’s fav. She shouted, “OMG, it’s crispy like chips. We don’t have good food like this at our restaurant” Indeed, it was the crispiest I could achieve this time. And it’s crispy again when I heated it up the next day in the oven. One more thing I’ll try next time is using a cast iron.

    oh cooking it in a cast iron is a great idea — why didn’t we think of it sooner? I need to re-learn how to make it from you because the one or two times I made it, it tasted good but was a bit on the soggy side.

    sly made some pho in a crockpot recently — it was really really good! never thought to make crockpot pho!!!

    Another thing that we didn’t think of is putting it on the rack instead of the plate before serving. So the bottom won’t get steamed up,soft. I just thought of it when I reheated the left over banh xeo this week.
    Also this time I tried a new trick beside the beer.
    I should have kept the medium Lodge, lighter skillet to try. You should try using it. I will find a round griddle. It’s not deep and heavy. But my skillet would work for now.
